Almond Bark Marshmallow & Rice Krispie Clusters

A sweet treat made easy with peanut butter, Rice Krispies, and mini marshmallows then coated in chocolate almond bark. These clusters are perfect for holiday giving or a treat platter.


This recipe was given to me back in the early 1990's from a friend I worked with. The recipe I received never indicated whether to use white or chocolate almond bark and since most know what a chocoholic I am, it's not a surprise I went with chocolate. I mean it's chocolate and peanut butter, what could be better?


Some people refer to these as no bake cookies or no bake dessert and I think that is a fair description, but I would also put them in the candy category because the ingredients are full-on candy ingredients and may remind you of a candy bar! After doing a little research, the ingredients in this recipe are also called Avalanche Cookies. The recipe is just a handful of simple ingredients and really good!


WHAT YOU NEED

  • Chocolate Almond Bark - I used the Great Value brand from Walmart and it melts really well.

  • Peanut Butter or Crunchy Peanut Butter - I am a creamy peanut butter fan, so that is what I used.

  • Mini Marshmallows - make sure they are fresh, soft marshmallows so when you get gooey marshmallows in that bite, it is even more delicious

  • Crispy Rice Cereal - Kellogg's Rice Krispies or whatever brand you choose; I used Great Value

  • Nuts - I used crushed almonds but you can use your favorite nut, or omit the nuts completely



Tips for Making Almond Bark Marshmallow & Rice Krispie Clusters

  • You may use chocolate or white almond bark or chocolate or white chocolate chips

  • If including peanuts, I recommend dry roasted peanuts

  • If you think this is a recipe you and your family will like, I recommend doubling the recipe

  • I used a small cookie scoop to drop the mixture onto the parchment paper

  • If you are you a chocolate and peanut butter lover, next time add some miniature peanut butter cups or peanut butter chips

How to Make Almond Bark Marshmallow & Rice Krispie Clusters

The hardest part about this recipe is going to the grocery store to get the ingredients!


Step 1: Place a piece of parchment paper or wax paper on a large cookie sheet and set aside. In a large bowl, that is a microwave-safe bowl, melt almond bark in 1 minute increments, stirring between each cook time. You may also melt in a double boiler or a crock pot.


Step 2: Once the almond bark is melted, add peanut butter and stir until fully combined with the melted chocolate. Add nuts, rice crispies, and marshmallows to the chocolate/peanut butter mixture and mix until all ingredients completely covered.

Four ingredients added to the melted chocolate almond bark brings the recipe together.


Step 3: Drop by spoonful on a the prepared pan covered with parchment paper or wax paper in a single layer.

How to Store Almond Bark Marshmallow & Rice Krispie Clusters

Once the almond bark has harden, store these yummy treats in an airtight container at room temperature in a cool, dry place for up to one week. You may also store in the refrigerator for up to 3 weeks. These treats may also be frozen. Make sure they are in an airtight container and/or freezer bag and store for up to 3 months. Remember to date your bag before freezing.


The Clusters are an easy recipe and ideal for giving during the holiday season on your holiday platter or for eating any time of the year. They are Forkin' Good!
