This pie is a Summertime favorite, I mean who doesn’t love a good BLT? This is a one-dish meal, which is my kind of weeknight cooking! Garnish this pie with additional mayonnaise, shredded lettuce and diced tomato before serving.
This is another recipe I received from the village of women I worked with that took me under their wing right after I got married and shared so many recipes!
Gold Medal's "miracle mix" (Bisquick) is the biscuit (bread) in this recipe. The original recipe is known as Betty Crocker impossible pies or impossible bacon pie.
Ingredients for the BLT Pie
Bacon
Swiss Cheese
Mayonnaise
Large Eggs
Bisquick Mix
Salt
Black Pepper
Shredded Lettuce
Diced (or thin sliced) Tomatoes
Tips for Making Bacon, Lettuce and Tomato (BLT) Pie
An easy tip for cooking the bacon in the oven or on the grill is to lay it on a rack covered with aluminum foil with holes poked through so the grease may drain into the pan below. It makes for easy cleanup!
Not a fan of Swiss cheese, try parmesan cheese, mozzarella cheese, feta cheese or cheddar cheese
Garnish the pie with whatever you like on your BLT sandwich - lettuce, tomato, red onion, avocado, butter softened cream cheese, horseradish, your favorite salad dressing or a bit of sour cream!
Yummy side dishes to go with your BLT are potato salad, creamy Italian pasta salad, cottage cheese or good 'ol french fries!

How to Make Bacon, Lettuce and Tomato (BLT) Pie
Once the bacon is fully cooked, the rest comes together very quickly!
Step 1: Heat oven to 400°F and prepare a pie plate with non-stick cooking spray. Cook the 12 slices bacon to your liking then move to a plate covered with a paper towel and allow it to cool. Once cool, crumble the bacon or cut into small pieces.
Step 2: While the bacon is cooking, in a medium bowl mix together the mayonnaise (real mayo, not Miracle Whip), eggs, Bisquick baking mix, salt and pepper and beat with a wire whisk or hand beater until smooth and set aside.
Step 3: In the prepared pie plate, layer bacon in the bottom of the plate followed by the shredded Swiss cheese then pour the mayonnaise mixture on top of the cheese and bake for 25-30 minutes or until golden brown. Allow the pie to cool for 5 minutes on a wire rack. Cut and move to a serving plate and garnish with additional mayonnaise, lettuce, and tomato on top of pie.
How to Store Bacon, Lettuce and Tomato (BLT) Pie
Store the BLT pie in the microwavable pie plate covered with plastic wrap or move to an airtight container and store in the refrigerator for 3-4 days. This
