A family favorite that is easy to make and delicious!
This recipe came from my mother-in-law. She was also a recipe collector and did a lot of baking for her church, her family and her friends. While I had my own banana bread recipe in my collection, this one quickly became the family favorite. What I like is that it is simple to make and the recipe gives you two large loaves or four small loaves!
How to Make Banana Bread
This recipe calls for 2 cups of ripe bananas which gives it amazing banana flavor and adds more moisture to the bread. Start with 2 bananas and mash with a fork until you have two cups of bananas. Depending on the size of the banana, it will take 2-4 bananas to make 2 cups.
Preheat oven to 350°F and prepare two 9x5" loaf pans with nonsticking cooking spray. In a large mixing bowl, combine the bananas, eggs, oil, sugar and vanilla and combine well. To the banana mixture, add flour salt and baking soda and combine well.
Pour the mixture evenly in to the two prepared loaf pans. Bake at 350°F for 40 -50 minutes or until a toothpick comes out clean from the center of the bread. Allow the bread to cool completely in the pans.
What To Add to Banana Bread
As you can see from the photos, I added 1 cup of mini chocolate chips to the batter and once in the loaf pans, I sprinkled more on top (a favorite in our house). You can also add 3/4 cup chopped nuts for a Banana Nut Bread - pecans or walnuts are a good choice.
How to Freeze Banana Bread
Allow the banana bread to cool completely before freezing. Tightly wrap the whole loaf, half loaf or slices in aluminum foil. Place the wrapped banana bread in a large freezer storage bag or reusable container, removing as much of the air as possible. Put the date the bread was made on the bag and freeze for up to two months. To thaw, place the wrapped (or unwrapped) banana bread on the counter top and allow to thaw to room temperature.
