Breakfast Burrito

Stuffed with sausage, eggs, and cheese, these Breakfast Burritos are wrapped in a flour tortilla. This simple recipe can be prepared in advance and reheated in the morning, making it an ideal breakfast choice for home, family gatherings, or early morning tailgates on game day!

This Breakfast Burrito recipe is so easy to make and so delicious! This recipe belonged to the dad of my "sister from another mister." He made them for her and her sister when they were growing up. Now she makes them for her family and generously shared the recipe with me. I take these Breakfast Burritos to our game day tailgates and they are always a huge hit! We heat them up on the grill, serve with homemade hot sauce and everyone loves them. They are so yummy, you have to give these a try!!


What You Need:

  • Eggs

  • Breakfast Sausage or Pork Sausage

  • Garlic Powder

  • Onion Powder

  • Shredded Cheddar Cheese

  • Soft Flour Tortillas - taco size for small or burrito size for large


Tips for Making Breakfast Burritos

  • If you plan to refrigerate and bake the next morning, I recommend adding more shredded cheese on top of the meat and egg mixture before rolling.

  • If you are a vegetable lover, add onion, green pepper or jalapeños, or green chiles to this delicious breakfast burrito

  • Once heated, add your favorite taco toppings like hot sauce, salsa and sour cream

How to Make Breakfast Burritos

Step 1: In a large skillet, cook the breakfast sausage until done. Drain off excess grease and return sausage to pan and set aside.

Step 2: In a medium bowl, add the eggs, garlic powder and onion powder and beat.  Add the eggs to the pan with the sausage and scramble eggs next to the sausage. Once the scrambled eggs are mostly cooked, combine with the cooked sausage and cook until done. Add in the cheese and allow to melt. Remove from heat. If you would like to add in vegetables, add those (like onions and bell pepper) with the breakfast sausage and cook until the vegetables are soft.

Step 3: Warm tortilla in a cast iron skillet over medium-high heat for about 15 seconds on each side. They will be hot!  Warming the tortilla makes it more pliable and easier to roll up your ingredients so don't miss this step. You may also warm your tortillas in the microwave by placing one tortilla between two damp paper towel(s) and microwave for 15 seconds.

Step 4: Add the sausage, egg and cheese mixture to bottom of the tortilla and roll burritos. Don't overstuff the burrito because it will make it difficult to roll without ripping the burrito. To roll, fold the sides in first and roll the tortilla away from you, tucking everything in as you go. Bake at 350°F for about 20 minutes or until the center is hot. NOTE: if you plan to bake the Breakfast Burritos the next morning, wrap individual burritos in aluminum foil with seam side down and place in a plastic bag or airtight container and refrigerate until ready to heat.

How to Store, Warm and Freeze Breakfast Burritos

To Store:  once you have the burritos completed, place on aluminum foil and wrap each one separately then place in a sealable bag, removing as much air as possible, and store in the refrigerator.  


To Warm: remove from the sealable bag and place burritos, that are still wrapped in aluminum foil, on a baking sheet. Heat in the oven at 350°F for 15 minutes or until the center is warm.  


To Freeze: follow the same steps as above by wrapping in aluminum foil and placing in a freezer bag to store in your freezer.
