Sausage Breakfast Casserole

A delicious casserole with sausage, hash browns and eggs that can be made ahead of time! Perfect for holidays, overnight guests or brunches!

This recipe came from my sister from another mister. I was looking for a good egg casserole to make for brunch and she shared her recipe for a delicious and easy casserole. This one can be made the night before, and stored in the refrigerator, or the morning of the brunch. It is delicious and filling. I think you will like this Forkin' Good Breakfast Casserole! How to Make the Breakfast Casserole

Only a few simple ingredients and you are on your way to comfort food heaven. Preheat oven to 350°F and lightly spray a 9x13 inch pan with cooking spray. Cook your breakfast sausage in a medium skillet on medium heat until no longer pink. Drain fat and set aside. In the same skillet add the hash browns and cook until lightly brown. Place hash browns in the bottom of your 9x13 pan and top with sausage and cheese.


Whisk together eggs, salt, pepper, garlic powder, onion power and milk. Pour over hash brown mixture in 9x13 pan.


At this point, you can cover and refrigerate or bake, uncovered, for 35-40 minutes.


This casserole is done when the edges are set and lightly brown and the center jiggles slightly.


Make the casserole the night before and bake in the morning. Cover the the pan and place in refrigerator. Take the casserole our for about 30 minutes prior to cooking. The baking time may need to increase by 10 minutes or so since the casserole is cold! Enjoy!
