Broccoli Rice Casserole

A cheesy and delicious side dish that is easy to make!

This recipe has been around my family for a long time and is a family favorite! I have taken it to many potlucks and family functions over the years because it is a great side dish! My brother was a volunteer fireman and the wife of a fellow fireman shared this recipe in the early 1980's and our family fell in love with it and it has been a staple ever since. It is so easy, you've got to give it a try!


How to Make Broccoli Rice Casserole

This takes just a few minutes to pull together and about 30 minutes in your oven or 10-12 minutes in the microwave. You will not notice a taste difference in the manner in which it's cooked.


Start by cooking the broccoli. I use a package of frozen broccoli florets and cook as directed on the package. As the broccoli cooks, grab your casserole dish and lightly spray with cooking spray. Combine the cream of mushroom soup, chicken broth and melted butter and mix thoroughly. Next add the Cheez Whiz and Minute rice and mix. When the broccoli is cooked, add it and combine. That's it - all in one dish!


You can cook this at 350°F for 30 minutes in the oven or for 10-12 minutes in the microwave. When cooking in the microwave (my preferred choice), I give it a stir about half way through so the cheese doesn't stick to the dish.

This is a great side dish that goes well with just about anything. If you have a big group, double the recipe (and the time in the microwave) to feed more people! My family makes it year round! I think you will like this one and I hope you will give this Forkin' Good Recipe a try!
