Cadbury Mini Egg Cookie Recipe

My family's favorite chocolate chip cookie recipe with Cadbury Mini Eggs added to the batter and on top of the cookie! The perfect Easter cookie because they are easy to make and full of chocolate deliciousness!

Cadbury Mini Egg Cookies

This chocolate chip cookie recipe has morphed over the years into what it is today. Starting with the basics, there were many variations and changes over the years, like more brown sugar, mixing up the amount of flour and leavening agents and finally creaming the wet batter to death! 


I am a chocolate lover and it doesn't have to be expensive chocolate, it just has to be chocolate. If there was a chocolate season, it should be Easter!  I could make a long list of my favorite Easter candy! All of the delicious milk chocolate eggs out there including Cadbury Mini Eggs. It's a real shame that chocolate eggs aren't sold year round! 


These cookies are a perfect treat for the family in the Spring or for Easter thanks to the pastel color Cadbury Mini Eggs (so pretty!). If you've never tried the Cadbury Mini Eggs, now is the time. The creamy milk chocolate center is the perfect addition to this recipe. HINT: the cookies are AMAZING while still warm!  


What You Need

  • Brown Sugar

  • White Sugar

  • Butter

  • Large Eggs

  • Vanilla Extract 

  • Baking Soda

  • All Purpose Flour

  • Mini Chocolate Chips

  • Bag of Cadbury Mini Eggs


Tips for Making Cadbury Mini Egg Cookies

  • The Cadbury Mini Eggs in the batter need to be crushed. Measure out 1 cup of whole Cadbury Mini Eggs, then move to a plastic bag, seal and crush with a rolling pin. Leave some bigger chunks because they are delicious in the cookies!

  • Not a lover of semi-sweet chocolate chips, substitute with milk chocolate, dark chocolate or white chocolate chips!

  • These cookies do not need to be refrigerated before baking

How to Make Cadbury Mini Egg Cookies

This easy recipe comes together easily with mostly pantry staples!


Step 1: Preheat oven to 350°F and line a cookie sheet with parchment paper.  In a large mixing bowl (or the bowl on a stand mixer with paddle attachment), add brown sugar, white sugar, softened butter, eggs and vanilla.  Mix on low speed until the mixture is completely combined and creamy (I mix for at least 5 minutes).

Step 2:  Slowly add flour mixture that includes baking soda (add 1 teaspoon salt if you're using unsalted butter). Mix until the dry ingredients are fully combined with the wet ingredients. Scrape down the sides of the bowl and add in the mini chocolate chips and crushed Cadbury Mini Eggs and combine. Scoop out the dough using a medium cookie scoop (2 tablespoon cookie scoop) and then roll into balls.  Place the dough balls 2 inches apart on the prepared baking sheet to allow for spreading. Bake for 9-10 minutes or until the edges are golden brown. Immediately add a few more Cadbury Egg pieces on top of the cookies and return to the oven for 1 minute (optional). Allow the cookies to rest on the cookie sheet for a few minutes before transferring to a cooling rack. 

1)Add flour mixture to wet mixture; 2) wet and dry ingredients combined; 3) dough with mini chocolate chips and Cadbury Mini Eggs added; and 4) dough balls ready to bake.


How to Store Cadbury Mini Egg Cookies

Store the cooled cookies in an airtight container at room temperature for up to 5 days. The cookies may also be frozen after baking. Store cooled cookies in a freezer-safe container or in a freezer bag for up to two months (remember to date before freezing!). When you are ready to enjoy the frozen cookies, allow them to thaw at room temperature and follow above baking directions.
