Cheeseburger Soup

Many years ago, a friend I used to work with shared this recipe with me. She was a fantastic cook, and I was always eager to receive any recipe she was willing to pass on. This soup is rich and satisfying and is creamy deliciousness.

What You Need:

  • Lean Ground Beef

  • Onion

  • Potatoes

  • Carrots

  • Celery

  • Beef bouillon cubes

  • Water

  • Cheez Whiz

  • Corn

Tips for Making Cheeseburger Soup

  • The beef bouillon cubes and water may be substituted with 2 cups of beef broth or chicken broth

  • Shredded Velveeta Cheese may be substituted for the Cheez Whiz

  • Add 1/4 cup of cheddar cheese or sharp cheddar cheese to give it a little extra cheese flavor

  • Green beans can be added or replace any of the vegetables

  • Once you have the ground beef cooked, the rest of the cheesy soup can be finished in a slow cooker

  • Add a dab of sour cream and green onions when serving, if desired

How to Make Cheeseburger Soup

This soup full of cheesy goodness takes about one hour for it all to come together!

Step 1: In a large skillet, crumble beef while browning on medium-high heat until done, about 10-12 minutes. Add onions about half way through. Drain excess grease and set aside.

Step 2:  Combine the ground beef mixture, potatoes, celery, carrots, bouillon cubes and water in a large saucepan, large pot or soup pot. Simmer on stove top on medium heat for 30 minutes or until vegetables are tender.

Cooked ground beef and vegetables simmering.

Step 3: Stir in drained corn and Cheez Whiz and simmer for another 20-30 minutes. Allow the soup to slightly cool before serving.

How to Store and Reheat Cheeseburger Soup

Store: Allow this hearty soup to cool completely, then store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheat: To reheat the Cheeseburger Soup, pour into a pan and heat on the stovetop on low until warm. If the soup is too thick, add a little beef broth while warming.
