Cheesy Corn and Noodle Casserole

Living in Iowa, we have the best fresh corn (sweet corn), but my love for corn goes way beyond. Many years ago, a friend brought this delicious side dish to a 4th of July celebration and I wondered where this recipe had been all my life! If you love corn, pasta, and cheese, I know you will love this recipe! 


This is not your typical corn casserole recipe. It is a creamy, pasta filled side dish unlike what you are used to. The best thing about this recipe is that the ingredient list is short - only 5 ingredients! I love easy recipes and easy dinner ideas, including side dishes, and this is a great side dish for holiday dinners, family gatherings, family reunion, potluck or any time of year! You will get rave reviews!

Ingredients you will need
  • Cream-Style Corn

  • Wide Egg Noodles

  • Butter

  • Sugar

  • Grated American or Velveeta Cheese












Tips for Making Cheesy Corn and Noodle Casserole

  • The recipe calls for Grated American Cheese which I have a hard time finding in my local stores so I substituted with Grated Velveeta Cheese

  • Not a lover of American cheese, try mild or sharp cheddar (I have only used American)

  • Not a lover of wide egg noodles, use your favorite pasta like elbow macaroni

  • If you only want to dirty one pan, prepare an 8x8 inch pan with nonstick cooking spray and add all ingredient to the pan then bake (it's what I do!)

How to Make Cheesy Corn and Noodle Casserole

This easy recipe comes together with 5 ingredients and about 45 minutes, including cooking time!


Step 1:  Preheat oven to 350° and prepare and 8x8 inch baking dish or casserole dish with nonstick cooking spray.  In a medium pan, add the uncooked pasta and cook noodles according to package directions.  While the noodles are cooking, melt butter and add to a large mixing bowl. Add remaining ingredients of sugar, cream-style corn and grated American cheese to the large mixing bowl and combine.  When the noodles are fully cooked, drain and add to the bowl with the other ingredients. 


1)Cook wide egg noodles as directed on package; 2) move cooked pasta to large bowl and add the rest of the ingredients; and 3) mix until fully combined.


Step 2: Move mixture to the prepared baking dish and bake recipe for 30-40 minutes. Top with fresh parsley, if desired.

1)Mixture fully combined and ready to go into oven and 2) Cheesy Corn and Noodle Casserole fully cooked and ready to serve.


How to Store Cheesy Corn and Noodle Casserole

Store leftovers in an airtight container or wrap your dish with plastic wrap and store in the refrigerator for up to 5 days. This casserole reheats well in the microwave and is delicious the next day!
