A healthy version of an Italian favorite! Chicken Breast Cacciatore is an easy dinner that can be served up over pasta or rice.
This recipe came from my father-in-law many years ago when he and my mother-in-law were on a healthy eating plan. He worked with someone who shared the recipe and it is so delicious it deserves to be shared.
Most Chicken Cacciatore recipes call for chicken thighs to be cooked in a skillet. This recipe calls for chicken breasts to be baked. The sauce is cooked on the stovetop, like traditional Chicken Cacciatore, but it then gets poured over the top of the chicken breasts and put back in the oven, unlike traditional Chicken Cacciatore! Even with the differences, this recipe is very flavorful and is a quick weeknight meal.
What You Need
Chicken Breast, boneless & skinless
Chopped Onion
Minced Garlic
Tomatoes, diced, canned with juice
Tomato Sauce
Italian Seasoning
Salt
Pepper

How to Make Chicken Cacciatore
Preheat your oven to 350°F. Cut the chicken into 6 pieces and place in a prepared 9x13 inch baking dish. Top with your favorite chicken spice (I use Montreal Chicken Seasoning) or salt and pepper and cover with aluminum foil. Allow it to bake for about 20 minutes or until the internal temperature of the chicken is 165°F or above.
While the chicken is cooking, dice your onion and place in a medium size skillet sprayed with non-stick cooking spray or olive oil. Saute the onion until tender. Add in the minced garlic, diced tomatoes, tomato sauce, Italian seasoning, salt and pepper. Bring the mixture to a boil, stirring frequently.
Once the chicken is fully cooked, remove from the oven. Pour the tomato mixture over the top of the chicken. Cover with aluminum foil and bake for 20-30 minutes.
Serve the Chicken Breast Cacciatore over rice or pasta.
Variations
Add green, yellow or red bell pepper (or all) to the tomato mixture while cooking
Add mushrooms to the tomato mixture while cooking

Chicken Breast Cacciatore can be stored in an airtight container in your refrigerator for up to 3 days.
