Chicken Broccoli Casserole

Chicken Broccoli Casserole is packed with chicken, tender broccoli, a creamy sauce made with curry powder and topped with cheddar cheese - a yummy dinner!

I have had this recipe since the 1980's. It's hard to admit that I'm that old, but yes, there it is! A friend that I worked with shared the recipe telling me how easy it is to make for a quick weeknight meal and it really is.


What You Need

Broccoli - Fresh or frozen broccoli florets

Chicken Breasts (cooked) or Rotisserie Chicken

Cream of Chicken Soup

Mayonnaise

Lemon Juice

Curry Powder

Bread Crumbs

Cheddar Cheese (shredded)


How to Make Chicken Broccoli Casserole

Getting this casserole together is very simple. Layer the broccoli and cooked chicken in the dish, then cover with the creamy soup mixture and top with bread crumbs and cheese. It is ready for the oven in no time and is so good!


Step 1: Preheat oven to 350° F and prepare a 9x13 inch baking pan with non-stick cooking spray.


Step 2: Cook the broccoli (I used frozen broccoli florets) according to the directions on the package and drain well. Arrange cook broccoli in a prepared 9x13 inch baking pan.


Step 3: Arrange cooked chicken pieces on top of the broccoli.


Step 4: Combine the soup, mayonnaise, lemon juice and curry powder and mix well. Spread the mixture over the top of the broccoli and chicken, then add the bread crumbs to the top of the mixture.

Step 5: Add the cheese on top of the bread crumbs. Cover and bake at 350°F for 40 minutes.


Allow the Chicken Broccoli Casserole to cool for a few minutes, then serve with a side salad.


Storing Chicken Broccoli Casserole

This dish can be stored in an airtight container in your refrigerator for up to 3 days.
