Comfort food like Mom makes!
My husband grew up eating this delicious chicken casserole. His mom got the recipe from her good friend and it became a staple in their home. I had it a number of times at my mother-in-law's home and it's one of those easy to put together recipes for a quick and filling meal. This recipe makes a lot, so prepare yourself for some great leftovers!
How to Make This Casserole
If you have some leftover cooked chicken, this is the recipe to use it in! You can also use Rotisserie Chicken from your favorite grocery store!
Start by preheating the oven to 350° F. In a medium pan, cook the egg noodles according to package directions. While the noodles are cooking, combine in a medium bowl the mayonnaise and chicken broth. Add in onion, celery, parsley, salt and pepper and mix well. Next add in the cooked chicken, cheddar cheese, and parmesan cheese. Once the egg noodles are done, add to the above mixture and combine.
Pour the above mixture in to a greased 9x13 pan. Lightly top with cheddar cheese. Place on the top shelf in your oven and bake for 35-40 minutes.
