Chocolate Chip Pudding Cookies

Soft and chewy chocolate chip cookies made with pudding that keeps them soft! Every bite is perfection!

This recipe came from the wife of my husband's co-worker back in the 1990's. Please know that my husband claims he is the best chocolate chip cookie maker and a lot of people agree with him! When he raved about this recipe, I knew it was a keeper. If you follow the recipe, the cookies will turn out soft and chewy every time (because of the pudding mix!). They are so easy and so good!


The pudding cookie taste very similar to a classic chocolate chip cookie, but every bite of every cookie has a soft and moist texture. Take it from an expert (my husband) they are delicious!


Ingredient List:

Sugar

Brown Sugar

Instant Vanilla Pudding Mix

Butter

Vanilla

Eggs

Flour

Baking Soda

Chocolate Chips


PLEASE NOTE: It Is important to use dry instant pudding mix. Do not make the pudding as directed, just add the dry mix! Also, it must be instant pudding mix (not cook & serve). This recipe calls for the smaller box (3.4 oz) but if you can only find the large box, simply add in a little more than half a box.


How to Make Chocolate Chip Pudding Cookies

Preheat your oven to 350°F. In a stand mixer or with an electric mixer, beat the sugar, brown sugar and butter for 2-3 minutes. Add the pudding mix, vanilla and eggs and continue mixing.


In a separate bowl, sift together the flour and baking soda and slowly add to the wet mixture.


Stir in the chocolate chips until fully incorporated. Drop by teaspoonfuls on the ungreased (or covered with parchment paper) baking sheet.

Storing and Freezing

To store: The cookies will stay fresh for 2-3 days if stored in an airtight container.

To freeze the dough: Roll the dough into balls and refrigerate until solid, then transfer to a freezer bag. You can bake frozen cookie dough by laying the frozen cookie dough balls on the cookie sheet lined with parchment and allow them to sit at room temp while the oven heats up, then add 1-2 minutes to the original cooking time.

To freeze baked cookies: Allow the cookies to cool completely. Place in a freezer bag, add the date to the bag, and store in the freezer for up to 3 months.
