Chocolate Drop Cookies

With a cake-like texture and creamy chocolate frosting, this cookie is easy to make and absolutely delicious!


Both my mother-in-law and I were avid recipe collectors, and we often exchanged recipes. My father-in-law had a sweet tooth, so her collection includes many cookie and bar recipes. Some of these recipes are older than me, and over time, I have discovered some truly fantastic ones in her collection. The one I'm sharing with you today is definitely worth trying!


It seems like I always mention that every recipe is simple to prepare, which is my default when it comes to recipes. As I have consistently held busy, full-time jobs, I am constantly on the lookout for recipes that are both easy and tasty and this one is no different! 


What You Need

  • Unsalted Butter

  • Dark Brown Sugar

  • Large Egg

  • Vanilla Extract

  • Unsweetened Chocolate Squares

  • All Purpose Flour

  • Salt

  • Baking Soda

  • Milk

  • Powdered Sugar


Tips for Making Chocolate Drop Cookies

  • Make sure the butter and egg are at room temperature before starting

  • Want a little more chocolate, add a few mini chocolate chips

How To Make Chocolate Drop Cookies

This chocolate cookie recipe comes together quickly and is easy to make!


Step 1: Preheat oven to 350°F.  For prep, melt 2-ounces of unsweetened chocolate in a microwave safe bowl at 30 second increments until smooth and creamy and set aside. In a small bowl, beat one egg and set aside. Finally, in a separate bowl, combine flour, salt and baking soda, mix and set aside. 


Step 2: To make the cookie dough, in the bowl of a stand mixer with the paddle attachment or in a large bowl mixing by hand or on low speed with an hand mixer, cream butter and sugar until smooth and fully combined. Add one beaten egg plus the vanilla and melted chocolate. Add dry ingredients (flour, salt and baking soda) to the wet ingredients alternately with the milk, scraping down the sides and bottom of the bowl, and mix until fully combined. 


1)Mix butter and brown sugar; 2) add beaten egg, melted chocolate and vanilla 3) add dry ingredients and milk.


Step 3: Drop the cookie dough by teaspoonfuls onto a baking sheet lined with parchment paper.  Bake cookies at 350°F for no more than 10 minutes. For best results, check the cookies after 9-10 minutes of baking; press your fingertip into the top of the cookie and if it springs back, then remove from the oven!  Do not over bake! Move the baked cookies to a wire rack and allow to cool completely before frosting.


Step 4: To make the frosting, in a medium bowl that is microwave safe, melt the butter and 1-ounce of unsweetened chocolate. Add the milk and powdered sugar and mix well with a handheld mixer until fully combined and creamy! Add frosting to the cooled cookies and enjoy! 



How to Store Chocolate Drop Cookies

The delicious cake-like cookies may be stored in an airtight container for up to 4 days at room temperature.
