Chocolate Toffee Bars

If you have a sweet tooth for a buttery toffee flavor, this homemade candy bar recipe, also known as English toffee bars, is for you! 


This easy recipe came to me back in the 1980's from a friend I worked with. She shared them during the holidays and because I love a Heath Bar, I fell in love with this recipe immediately. What makes it different from other recipes is that it has chocolate on the bottom and the top of the homemade toffee, so for us chocolate lovers, this is perfect! 


What You Need

  • Hershey Chocolate Bars, full size

  • Pecans, chopped

  • Dark Brown Sugar

  • Unsalted Butter


Tips for Making Chocolate Toffee Bars (Heath Bars)

  • Be sure to butter the pan completely so the chocolate and toffee doesn't stick. I have never used parchment paper, but that is an option.Chopped pecans may be purchased in the baking aisle of your grocery store, but you will want to chop into smaller pieces

  • I have made this with the giant Hershey Bars and I recommend the normal full size candy bars because they are not as thick. 

  • If you prefer almonds over pecans, feel free to substitute

  • If you prefer dark chocolate over milk chocolate, feel free to substitute

How to Make Chocolate Toffee Bars (Heath Bars)

An easy recipe that comes together with simple ingredients. 


Step 1: Prepare a 9x13-inch pan with butter, ensuring the sides and bottom is fully covered; set aside. Chop pecans into small pieces and set aside. 


Step 2: Line the bottom of the prepared 9x13-inch pan in an even layer with the Hershey Chocolate Bars (about 10 bars) with the writing side down. You may have to break some of the bars into smaller pieces to ensure you fill the pan. Top with half of the chopped pecans and set aside. Prepare your next layer of chocolate identical to what was on the bottom of the pan, but do not add to the pan; you want to have the chocolate bars ready so you can immediately press into the toffee.

Step 3: In a medium sauce pan over medium heat, bring the brown sugar and butter to a boil, mixing constantly, ensuring it reaches the hard crack stage (you will need a candy thermometer to ensure you reach this stage). Cooking time will vary. At the hard crack stage, immediately remove from heat and pour mixture over the bottom layer of chocolate bars and spread with an offset spatula. Immediately lay down the top layer of chocolate bars (with writing side down) and press into the toffee layer. Spread remaining pecans over the top chocolate layer as it softens. Move the pan to a wire rack to allow the candy to cool.

Step 4: Once the Chocolate Toffee Bars are cool and set up, use a sharp knife to cut the the candy into small to medium squares or break apart like crack candy.

How to Store Chocolate Toffee Bars (Heath Bars)

This toffee candy should be stored in an airtight container at room temperature. It may also be stored in the refrigerator, but allow it to return to room temperature before serving.
