Chocolate Zucchini Bread

This easy to make Chocolate Zucchini Bread is moist and full of chocolate flavor! It's so good, no one will know you made it with a vegetable!

This recipe came from a co-worker that I worked with too many years ago to mention! The first time had Chocolate Zucchini Bread it was this recipe and I thought it was just about one of the best things ever. This is an easy to make, flavorful bread that you will love!


How to Make Chocolate Zucchini Bread

Preheat oven to 350°F and prepare two 9x5 inch loaf pans with non-stick cooking spray. Next, grate the zucchini by using a food processor or by hand with a grater (I used a grater).


In a large bowl, combine the oil, sugar, eggs, cinnamon, cocoa, butter and vanilla and mix well. Slowly add the flour, baking soda and baking powder and mix until fully combined. Finally add the grated zucchini and mix well ensuring the zucchini is fully incorporated into the batter.


Pour the batter into two loaf pans and bake until a toothpick inserted into the center of the loaves comes out clean. Place the pans on a wire rack and allow the loaves to cool in the pan. Once cooled, slice and enjoy!

Storage and Freezing

This recipe makes two loaves of bread. Enjoy one right away and freeze the other loaf! To freeze, wrap the loaf tightly in plastic wrap or foil, and put in zip-top bag. To thaw let it sit out at room temperature for an hour or so before serving.


Mix it Up

Try adding chocolate chips or chopped walnuts. It will take about 1 cup added to the batter. If you want to add both, use a 1/2 cup of each.
