Coffee Cake

Cinnamon and Brown Sugar in this cake makes it perfect for breakfast, snack or any time of the day!

This recipe came from my mom's collection. Another one from her friends at the local elementary school where she worked. I'm so happy I found this great recipe that comes together very easily and you very likely have all of the ingredients in your pantry! This is a great recipe for brunch, potlucks, tailgates or breakfast on the go.


What You Need

Cake Filling

Butter Brown Sugar

Sugar Cinnamon

Eggs

Vanilla

Milk

Flour

Baking Powder

Salt


How to Make Coffee Cake

Preheat your oven to 350°F. Prepare a 9x13 inch pan with nonstick cooking spray. In a medium bowl, combine the softened butter, sugar, eggs, milk and vanilla and mix until fully combined. Add the flour, baking powder and salt and mix well. The batter will be thick. Place half of the batter in the prepared 9x13 inch pan and spread evenly.


Next combine brown sugar and cinnamon and sprinkle half of the mixture on top of the batter. Repeat with the rest of the batter and top with the remaining brown sugar and cinnamon mixture.


Bake at 350°F for 45-50 minutes or until a toothpick comes out clean from the center. Give the cake about 20 minutes to cool before cutting.


How to Store Coffee Cake

The Coffee Cake may be stored in an airtight container for a 2-3 days in a cool, dry place. To freeze, tightly wrap in plastic wrap and put in a freezer bag or wrap in foil for up to 3 months. Remember to date before freezing. Thaw on the counter before serving.
