Creamy Cucumber & Onion Salad

This easy side dish is perfect for your summer meals and will go well with whatever you're grilling! Just 5 ingredients are needed to have this crunchy and invigorating salad ready on your table!

I grew up eating cucumber and onions mixed with white vinegar or apple cider vinegar and sugar, a dish I never truly liked and usually avoided. When my brother married my sister from another mister, she introduced our family to her mother's recipe for Creamy Cucumber & Onion Salad, which completely changed my view of this dish. The cucumbers and onions tossed in a tasty mayonnaise dressing were far more delicious to any I had ever tasted!

This classic cucumber salad is so delicious using simple ingredients that is quick and easy to make!

What You Need

  • Fresh Cucumbers

  • Red Onion

  • Mayonnaise

  • Kosher Salt

  • Black Pepper

  • Dried Dill Weed or Fresh Dill

Tips for Making Creamy Cucumber & Onion Salad

  • Use crisp cucumbers for this salad. I use fresh English cucumbers, they have fewer seeds and are very tasty. You can also try the Persian cucumbers, the mini cumbers that are sweet with a tender skin and very few seed. Lastly, good 'ol regular cucumbers from your garden, farmers market or the grocery store works perfectly!

  • Slice the cucumbers in to thin, bite size pieces or your your mandoline slicer!

  • I like Red Onion in this recipe for the color contrast, but any onion will work including white onion, yellow onion, or sweet onion

How to Make Creamy Cucumber & Onion Salad

Using simple ingredients, this side dish can be on the table in about 10 minutes!

Step 1:  Clean the crunchy cucumbers. Using a sharp knife, slice the cucumbers in to thin slices that are bite size pieces. Using a paper towel, pat dry the cucumbers removing any excess water and put in a large bowl.

Step 2:  Slice the red onion into thin slices and quarter.  Place in the bowl with the cucumbers.

Step 3:  To make the creamy dressing, add mayonnaise, salt, black pepper and dill weed or fresh dill over the cucumbers and red onion slices and toss until fully combined.  Cover the bowl and place in refrigerator until ready to eat!

How to Store Creamy Cucumber & Onion Salad

To store, place your creamy cucumber salad in an airtight container in the fridge for up to 3-4 days. The next day you will notice that the salad is a bit more watery and the cucumbers have soften a bit, but it’s still delicious.

You can make this fresh cucumber salad in advance and store it, but I recommend you keep the sliced cucumbers and onions separate from the dressing and toss together right before serving.

This is the best cucumber salad, in my opinion, and it's an easy recipe you can whip up in no time at all. It is Forkin' Good!
