Disappearing Marshmallow Brownies Recipe

You will love Disappearing Marshmallow Brownies because they are full of chocolate chips and gooey melted marshmallows making these bars chewy and oh so hard to resist!

This irresistible recipe came from my mom’s recipe collection! She was a collector of all things chocolate because that was her favorite! I actually found two versions of this recipe in my mom’s collection and they were similar with just a few differences so what I have posted here is what I took to be the best from both recipes! I hope you give it a try because it is yummy and easy and you know how much I love easy recipes!!


WHAT YOU NEED

  • Butter

  • Brown Sugar

  • Egg

  • Vanilla Extract

  • All Purpose Flour

  • Baking Powder

  • Salt

  • Miniature Marshmallows

  • Semisweet Chocolate Chips

  • Butterscotch Chip

TIPS WHEN MAKING DISAPPEARING MARSHMALLOW BROWNIES

  • I recommend using parchment paper to line the baking pan. With miniature marshmallows in the recipe, using the parchment paper will allow you to easily remove the Disappearing Marshmallow Brownies from the baking pan with little cleanup plus it will allow for a nice cut and clean lines!

  • If you prefer to melt the butterscotch chips in the microwave instead of on the stovetop, use a microwave-safe bowl and cook at 30 second intervals, stirring between cooking times. Do not overcook the butterscotch chips because they will dry up and stir into a clump (speaking from experience!)


HOW TO MAKE DISAPPEARING MARSHMALLOW BROWNIES

This recipe comes together quickly and you will be enjoying it with a glass of milk before you know it!


Step 1: Preheat oven to 350°F and prepare a 9x9 inch pan with parchment paper. To help the parchment paper stay in place, spray the sides of the pan with non-stick cooking spray.


Step 2: In a small pan, melt butterscotch chips and butter over medium heat, stirring constantly until the chips are completely melted (see above tips for melting in the microwave). Set aside to cool to lukewarm.


Step 3: Pour the butterscotch mixture into a large blow. Add the brown sugar, egg, vanilla extract, flour, baking powder, and salt and mix until fully combined. Next, gently stir in the mini marshmallows and chocolate chips and combine with 5 strokes. Do not over stir the mixture.


Step 4: Spread into your prepared pan and bake in your preheated oven for 20-25 minutes or until golden brown. Do not over bake. The center will be jiggly but will firm up as it cools.



How to Store Disappearing Marshmallow Brownies

The Disappearing Marshmallow Brownies may be stored in an airtight container in a cool, dry place for 3-5 days.
