Easter Bunny Cake

This incredibly simple Easter Bunny Cake is easy to make and delicious, making it a delightful activity to enjoy with children or grandchildren!


I have been baking this cake for many years! When I first started, my daughters were young, and now they are adults who still enjoy this delicious cake. 


To be honest, and as you can tell from the photo, I am not skilled at decorating cakes. I once believed that decorating cakes would be a relaxing hobby for me, so I took classes and purchased all the necessary supplies. I quickly realized that decorating cakes would not be a relaxing hobby for me! I tend to get too caught up in the details, leading to unnecessary stress, just like with this cake! Ha ha! With that, please overlook my lack of decorating skills and focus on how you can prepare this scrumptious and cute Easter Bunny Cake!


What You Need

  • White Cake Mix

  • Whole Milk

  • Egg Whites

  • Canola or Vegetable Oil

  • Vanilla Extract

  • Vanilla Frosting

  • Pink Colored Sugar

  • Food Coloring


Tips for Making Easter Bunny Cake

  • Use your favorite cake mixes for the Easter Bunny, for example carrot cake with cream cheese frosting or chocolate cake with chocolate frosting - whatever you desire!

  • The ingredient list above includes replacing the water with whole milk and adding 2 teaspoons of vanilla to give the box cake mix a more homemade taste.

  • I have used canned frosting for this recipe - a great tip to make your canned frosting go further and make it fluffy is to whip it with your electric mixer for 2 minutes (I also add a splash of vanilla extract to give it a little more vanilla flavor!).

  • Frost this cute cake with a knife or you can pipe it on, which is what I attempted to do!

  • To decorate the adorable Easter Bunny Cake: 1) Tint your frosting for the nose, whiskers, and bowtie outline; 2) Pink colored sugar for the inside of the ears, the nose, the cheeks and a splash of color in the bow tie; 3) Use pull apart licorice for the bunny face and to outline the bowtie; 4) If you're a fan of coconut, sprinkle coconut on top of the frosting while it's still wet, then decorate with pink jelly beans or any other Easter candy available!

How To Make Easter Bunny Cake

Modify a boxed cake mix, cut, frost and decorate. So easy!


Step 1:  Preheat oven to 325°F and prepare 2 - 9-inch cake pans with nonstick cooking spray.  In a large mixing bowl, combine the cake mix with milk, egg whites, and oil. Mix with an electric mixer starting at low speed, scrape the sides of the bowl and mix at medium speed until fully combined. Pour the cake batter evenly in to the 2 prepared round cake pans. Bake according to the directions on the box (usually 25-30 minutes) or until a toothpick comes out clean. Allow cake to cool to room temperature on wire racks before removing the cake from the pans.


Step 2: Once you have the cake layers out of the pans, place one of the round cakes on a cutting board, then cut out the bunny ears, using a sharp knife, leaving the rest of the cake as the bow tie for the Easter Bunny. See below photo on how to cut the cake. 


Step 3: Place the uncut cake (the bunny's head) in the middle of a 11 x 18" baking sheet lined with parchment paper.  Place the ears at the top and the bowtie at the bottom.


Step 4:  Make your own frosting or use canned frosting to frost the entire cake and decorate the Easter Bunny!  See tips for decorating above in the blog post! 


Storing the Easter Bunny Cake

As you can see, this is a big cake because it is so spread out. I put it on the baking sheet for easy transport, if you're headed to Grandma's, and for ease of covering to keep fresh. I use plastic wrap to cover the cake while on the baking sheet and until it is cut. Once the cake is cut and if you have leftovers, transfer to an airtight container for up to three days. The cake may keep up to 5 days in the refrigerator.
