These Easy Cheesy Lemon Bars are an easy, tart yet sweet dessert! Made with a lemon cake mix, the bars have a cake-like crust with a lemon cheesecake filling and topped with a lemon cream cheese frosting. These easy and delicious lemon bars will be a hit!
This recipe was shared by my husband's cousin after she learned I was doing a food blog. This classic lemon bar was in her mom's recipe collection and I'm so honored she shared it with me so I could share this dessert with you because it is really delicious and easy! Take this to any potluck or family gathering and you will see the bottom of the pan quickly!
What You Need
Lemon Cake Mix
Butter, melted
Lemon Frosting
Cream Cheese
Large Eggs
Tips for Making Easy Cheesy Lemon Bars with Lemon Cream Cheese Frosting
A standard box of lemon cake mix of any brand will work for this recipe. Please note that you are only using the dry cake mix. DO NOT make the cake mix recipe as directed on the box.
Any brand of canned lemon frosting will work well
Eggs should be a room temperature
If using a 9x13 inch metal baking dish, you will want to line the pan with parchment paper and you may need to reduce the baking time; I used a glass dish

How to Make Easy Cheesy Lemon Bars
Five ingredients and 3 easy steps to make this lemon bar recipe!
Step 1: Heat oven to 350°F and prepare a 9x13 inch pan with nonstick cooking spray or line with parchment paper if using a metal pan. In a large bowl, combine the lemon cake mix with melted butter and one egg and mix with a fork. The batter will be cookie-like. Pat the mixture in the bottom of the prepared pan.
Step 2: In a medium bowl, combine lemon frosting and the cream cheese and blend frosting mix with an electric mixer on high speed until completely combined. Divide the mixture in to two halves and set aside one half.
Step 3: Add two eggs to remaining frosting and cream cheese mixture and beat with an electric mixer for 3-5 minutes. Spread over the top of the cake mixture in the prepared 13x9 inch pan. Bake for 35-45 minutes or until light golden brown. Cool completely on wire rack. Frost the lemon bars with the reserved frosting and cream cheese mixture. Refrigerate before cutting.
How to Store Easy Cheesy Lemon Bars with Lemon Cream Cheese Frosting
If you have leftovers, cover the 9x13 inch pan with plastic wrap or store the bars in an airtight container in the refrigerator for up to three days. I don't recommend leaving the bars at room temperature for too long due to the frosting.
