Easy Graham Streusel Cake

This recipe came from my next door neighbor who loves to cook and collect recipes as much as I do. I love that she's willing to share and this is another good one!  This is also a great cake to make and give as holiday gifts! 


You might look at this recipe and think that's it is a Graham Streusel COFFEE Cake, but isn't coffee cake just cake?  Do we call it Coffee Cake so we have an excuse to eat cake for breakfast? I think so and I'm here for it!  So eat this for breakfast or any time of the day because this yummy cake is good eating and hard to pass up! 


What You Need

  • Graham Crackers

  • Brown Sugar

  • Cinnamon

  • Butter

  • Yellow Cake Mix 

  • Milk

  • Vegetable Oil

  • Eggs

  • Powdered Sugar


Tips for Making Easy Graham Streusel Cake

  • Use a food processor to to get fine graham cracker crumbs

  • Boxed or bagged graham wafer crumbs can be purchased at the grocery store

  • Try other cake mix flavors with this recipe like white or lemon

How to Make Easy Graham Streusel Cake

Step 1:  Heat oven to 350°F and prepare a 9x13 inch cake pan with nonstick cooking spray. Crush around 16 graham crackers (enough to get 2 cups of crushed graham crackers) using a food processor and pulse until finely ground.  Melt 3/4 cup butter on the stove top or in a microwave safe bowl. In a medium bowl, combine the graham cracks with the brown sugar and melted butter and mix crumbs until fully combined. Set aside.

Step 2: In a large mixing bowl combine the box cake mix with milk, vegetable oil and eggs. Blend cake mix with an electric mixer on medium speed for 3 minutes. Scrape down the side of the bowl and mix for another minute. Pour half of the cake batter into the prepared 9x13 inch pan. Top with half of the streusel mixture. Add the remaining cake batter on top of the graham cracker mixture. Finally top the cake batter layer with the rest of the graham cracker streusel mixture. Bake for 45-50 minutes or until a toothpick comes out clean from the center of the cake.

1)Half of the cake batter goes on the bottom of the prepared 9x13 inch pan; 2) half of the streusel topping; 3) remaining batter; and 4) the rest of the streusel topping.


Step 3: While the cake is baking, make the powdered sugar glaze. In a small bowl, combine powdered sugar and milk. Add milk, 1 tablespoon at a time,to desired consistency. Use an electric mixer on low speed and mix until fully combined. Once the cake cools, drizzle the glaze over top of the cake!

1)Glaze for top of cake; 2) fully baked cake ready for the glaze and 3) Easy Graham Streusel Cake ready for cutting.


How to Store Easy Graham Streusel Cake

Store this delicious graham cracker cake using an airtight container, by covering the pan with aluminum foil or saran wrap (plastic wrap) or putting any leftovers in a Ziploc bag and storing at room temperature for up to 3 days. 



I love great recipes and this cake quickly became a family favorite because it's made with simple ingredients and it's so delicious! This one is a must make! It is Forkin' Good!
