Where are my lemon lovers? This easy lemon cake recipe came from a friend I worked with back in the 1990’s! She is an amazing cook and I was so happy she was willing to share her recipes with me when I was a young woman!

You know how I love easy recipes and this is another one that fits in that category. It starts with a lemon cake mix and includes lemon gelatin which gives it the moisture! It comes together quickly and is really delicious! It is a simple lemon cake recipe!

This cake is wonderful for Mother's Day, Easter, Baby Showers or as a birthday cake for your lemon loving friends! You may top it with lemon slices or decorate it with fresh or edible flowers for a fresh Spring/Summer vibe!

What You Need:

  • Lemon Cake Mix

  • Lemon Gelatin

  • Whole Milk

  • Vegetable Oil

  • Eggs

  • Powdered Sugar

  • Juice from Fresh Lemons

Tips for Making Easy Lemon Cake with Lemon Glaze

  • Start with a boxed lemon cake mix but replace the water with whole milk to give it a homemade taste. Starting with a boxed cake mix is what makes this an easy recipe!

  • Adding the eggs one at a time and mixing after each egg is added will make the cake softer and is less likely to over bake and dry out in the oven.

  • Add a box of lemon gelatin to the batter. It gives the recipe a lemon zest flavor and gives it a bright yellow color!

How To Make Easy Lemon Cake with Lemon Glaze

An easy to follow recipe that you will have ready in no time!


Step 1: Preheat oven to 350°F and prepare a 9x13 inch baking pan with nonstick cooking spray. In a large mixing bowl, add the cake mix, milk, vegetable oil, and lemon gelatin and beat for 2 minutes using a hand mixer.


Step 2: Add eggs, one at a time, mixing for 1 minute into the batter before adding the next egg.

Step 3: Pour the cake batter into the prepared 9x13 inch pan and bake for 30-35 minutes or until a toothpick comes out clean. Cool on a wire rack for 10 minutes, then poke holes in the cake using a fork.

Step 4: To make the easy Lemon Glaze for the cake, grab a small bowl. Mix together the powdered sugar and the fresh lemon juice from 2 lemons. Mix well, scraping the sides of the bowl, until it is fully combined. Pour the glaze over the entire cake and allow it to set up before cutting. The fresh lemon justice brings an amazing flavor to the glaze!

How to Store Easy Lemon Cake with Lemon Glaze

Store the cake covered in the 9x13 inch pan or in an airtight container at room temperature in a cool, dry place for up to three days. You may also keep it in the refrigerator for up to 5 days.
