Fresh Vegetable Spring Garden Dip Recipe

This light and delicious dip is made with fresh vegetables and perfect for dipping with your favorite cracker!

This recipe was a favorite of my mom. I know this because she had no less than 5 copies scattered throughout her recipe collection! My sister is the one who made it and brought this festive dip to family functions. I remember eating it as a young girl and enjoying it; of course I've always been a lover of dip recipes! This vegetable dip is a different dip from what you might be used to (there is no cream cheese), but it is really delicious! A must try!


What You Need

  • Cucumber

  • Radishes

  • Onion or Green Onions

  • Garlic clove (or minced)

  • Green Bell Peppers (or Red Peppers)

  • Mayonnaise

  • Sour Cream

  • Salt

  • Black Pepper

  • This is the perfect dip to use up your great-tasting garden vegetables

  • Change up the dip by adding some fresh dill or other fresh herbs

  • If you want a healthy veggie dip, use reduced fat mayonnaise and sour cream

How to Make Fresh Vegetable Spring Garden Dip

Once you have all of the spring vegetables pureed, this delicious spring dip comes together easily!

Step 1: Clean and chop the cucumber, radishes, onion, and green peppers. Place all vegetables plus minced garlic in a food processor and puree until there are no large pieces. Place the pureed vegetables in a strainer or cheesecloth to remove the excess water. This step is very important - do not skip as the vegetables hold water and will make the dip watery.

Step 2: In a large bowl, combine 1 cup mayonnaise, 1 cup sour cream, salt and pepper and stir to combine.

Step 3: Add the drained pureed vegetables to the mayonnaise mixture and stir until fully combined.

Mayonnaise 2-Hour Rule

If you are serving the dip at room temperature at a gathering, remember that mayonnaise should not sit out longer than two hours at a time unless it is sitting in ice to keep it cool. Keep the 2-hour rule in mind when it comes to mayonnaise outside the refrigerator.

This simple recipe has the best flavor thanks to the combination of vegetables and can be served with vegetables, but it is especially good with Wheat Thins or, my favorite, a Triscuit cracker! Thanks to the creamy texture, I've seen people eat this dip with potato chips as well, so go wild and find your favorite dipping cracker/potato chip!

How to Store Fresh Vegetable Spring Garden Dip

This dip may be stored in an airtight container in the refrigerator for up to five day. The best thing is that this dip gets better the longer it sits!
