This recipe came from a friend I worked with back in the 1980's. Back then, we were all about potlucks at work and it was fun to try new recipes and this is a good one. This cheese sauce is really easy to make and comes together quickly with a little bit of effort and simple ingredients! This is the perfect appetizer for your game day party, family function or potluck!
What You Need
Diced Green Bell Pepper
Diced Onions
Olive Oil
Diced Tomatoes, drained
Diced Green Chiles
Chili Powder
Velveeta Shredded Cheese
Tips for Making Green Chile Queso Dip
Chop the green pepper and onion into small pieces so they are easy to pick up on your chip
Shredded Velveeta cheese is available in the refrigerated section of your grocery stores
You may replace the diced tomatoes with a can of Rotel brand tomatoes
Cooked lean ground beef may be added, if desired
Add fresh cilantro for garnish on the dip, if desired
Keep it warm in a slow cooker during your party or tailgate

How to Make Green Chile Queso Dip
This creamy cheese dip is easy to make and can be on the table in about 30 minutes!
Step 1: Dice the onion and green pepper. In a large pan on your stove top, saute green pepper and onion in oil on medium heat until the onion is translucent in color. While continuing to stir the green pepper and onion mixture, add the tomatoes and cook for 5 minutes, stirring so it doesn't stick to the skillet.
Saute diced green pepper and onion. Add tomatoes and cook 5 minutes.
Step 2: Add green chilies, chili powder and shredded Velveeta cheese and cook on medium-low until heat until cheese is melted. Transfer to a slow cooker or small bowl and serve with your favorite chips.
How to Store Green Chile Queso Dip
One thing I like about this recipe is that it doesn't make a lot! If you have leftovers, keep this cheesy dip in an airtight container in your refrigerator for 3 days. This melty cheese dip heats up well in the microwave (in a microwave safe bowl), cooking in 1 minute increments at 70% power, stirring after each cooking, until heated thoroughly.
This is among one of the best queso dips I've had. It is Forkin' Good!
