Krispy Chocolate Caramel Bars

This is not a new recipe; I have had it a long time - since the early 1990's! I mostly share these bars at potlucks because they are always a big hit and there is always someone whose never had them and everyone loves them! The bottom layer is a cookie crust, then a layer of caramel, and finally a layer of chocolate mixed with crisp rice cereal. I mean seriously, what's not to love?

What You Need

  • Flour

  • Powdered Sugar

  • Butter

  • Caramels

  • Evaporated Milk

  • Chocolate Chips

  • Rice Krispie Cereal

How to Make Krispy Chocolate Caramel Bars

These bars are easy to make and come together quickly!

Step 1: Preheat oven to 350°F. Prepare a 9x13 inch pan with nonstick cooking spray or line with parchment paper. In a medium bowl combine flour and powdered sugar. Using a pastry blender or fork, cut in the cold butter until you have a crumbly mixture. Press mixture into a 9x13 inch pan, ensuring the entire pan is covered. Bake for 10-12 minutes or until golden brown.

Step 2: While the cookie crust is baking, take a large pot and melt the caramels, evaporated milk and butter over medium low heat, stirring constantly. It may take about 5-7 minutes to melt the caramels. Once the caramels are melted and you have a gooey caramel mixture, spread over the cookie crust.

Step 3: In medium bowl, melt the chocolate chips on low heat in the microwave, stirring after each 1 minute of cooking, until the mixture is creamy. Stir the rice krispie cereal in with the melted chocolate. Pour mixture over the caramel layer. Cool completely, then cut with a sharp knife into 18 bars.

How to Store Krispy Chocolate Caramel Bars

These delicious rice krispie caramel squares can be wrapped in plastic wrap or stored in an airtight container for up to 5 days at room temperature.
