If you love Mexican food, like me, and need a quick and delicious meal for your busy night, be sure to try this Mexican Chicken. A perfect meal on a cool night that may become a family favorite! This recipe is from my "sister from another mister" and she shared this with me when we worked together back in the 1990s. This is a good one!
What You Need
Boneless Chicken Breasts, cooked
Onion or green onions, diced
Green Chilies
Cream of Chicken Soup
Cheddar Cheese
Flour Tortillas
Tips for Making Easy Mexican Chicken Casserole
Use leftover cooked chicken or a rotisserie chicken
If you prefer corn tortillas, substitute for the flour tortillas
If you love cilantro, top with fresh cilantro
Use Mexican Blend or Pepper Jack Cheese rather than Cheddar Cheese
For more protein, add a can of black beans or pinto beans

How to Make Mexican Chicken
This recipe is very simple and comes together very quickly for your busy weeknight.
1. Preheat your oven to 375°F and prepare an 8x8 inch pan (or casserole dish) with non-stick cooking spray. Cut up the tortillas into strips and place in the bottom of the pan and set aside. Dice a small onion and set aside.
2. Take the cooked chicken and cut into small pieces or shred chicken. Add the cut or shredded chicken mixture and the diced onion to a medium skillet sprayed with non-stick cooking spray, or with a little oil, and cook on medium heat until chicken is brown.
3. In a separate large bowl, combine soup, green chiles, and 1 cup of cheese and mix together. If this mixture is thicker then you prefer, add 2 tablespoons of milk. Pour the mixture on top of your tortilla strip. Add the cooked chicken and onion to the baking dish and stir until all ingredients are fully combined. Top with 1 cup of cheese and bake, uncovered, for 20-25 minutes in your preheated oven.

Allow the Mexican Chicken to cool for a few minutes, serve on a plate and top with lettuce, fresh tomatoes, salsa, and sour cream, if desired.
How to Store Mexican Chicken
Store leftovers in an airtight container without the toppings for up to 3-4 days in the refrigerator. The dish reheats well the next day in a microwave safe bowl and for best results, cook in one minute segments at 60-70% power.
