Bite size tortilla rollups are a make ahead appetizer for your tailgate or party!
Our family does a lot of tailgating. We evolved from sitting in the vehicle eating sandwiches 60 minutes before kick off to spending six hours in the parking lot tailgating with family and friends before every home game. I have several versions of tortilla rollups that friends have shared over the years and I'm excited to share them with you! My sister from another mister, who herself is of Mexican descent, shared this recipe. It is delicious and comes together easily and is one of my favorites.
How to Make Tortilla Rollups
You will love these easy to prepare, make ahead rollups. Mix up the ingredients as listed and spread over five tortillas that are 10" in diameter. Each tortilla needs to be rolled up tightly, stored in plastic wrap and kept in the refrigerator for 2-3 hours so they can firm up before slicing.
When ready to slice, cut off the ends because they do not have enough filling for your platter presentation (but they are still delicious so save those for later!) and cut into 1/2 inch each bite size pieces.
The tortilla rollups are delicious when served with salsa but are equally good on their own - try it both ways! I think you will like this Forkin' Good Recipe!
