Mound Bars

Coconut lovers will dig in to these rich and delicious Mound Bars with chocolate crust, coconut filling, and chocolate topping! This recipe is very easy and perfect for your potluck or holiday goodie tray!

This recipe came from a co-worker many (many) years ago. I love all things coconut and these bars are so delicious. The chocolate crust makes them different from other recipes you will find and gives it a rich flavor. I will admit that I didn't allow them enough time in the refrigerator before I took photos, so please forgive the "gooeyness" of the photos but know they are very delicious!


What You Need

- Sugar - Flaked Coconut

- Butter - Sweetened Condensed Milk

- Cocoa - Semi-Sweet Chocolate

- Flour - Powdered Sugar

- Eggs - Vanilla

- Baking Powder - Milk

- Salt

How to Make Mound Bars

Six easy steps brings this dessert together quickly.


Step 1: Preheat oven to 325°F and prepare a 9x13 inch baking pan with non-stick cooking spray. In a medium bowl, mix together the sugar, butter, eggs, and vanilla until fully combined. Slowly add the cocoa powder, flour, baking powder and salt and mix until thoroughly combined. Pour the mixture in to the 9x13 inch baking pan and bake for 20 minutes.


Step 2: While the above mixture is baking, mix the coconut and sweetened condensed milk in a medium bowl and set aside.


Step 3: Once the above mixture is done, remove from the oven and place on a cooling rack. Immediately spread the combination of coconut and sweetened condensed milk over the top of the crust. Return to the oven and bake for 15 minutes.


Step 4: While the dessert is in the oven for a second time, in a small microwavable bowl combine the butter and chocolate and microwave at 30 second intervals, stirring after each 30 second interval, until melted and smooth.


Step 5: In a medium bowl combine the powdered sugar, vanilla, chocolate/butter mixture and enough milk (3-4 tablespoons) and mix with an electric mixer until the mixture is creamy and will spread evenly.


Step 6: Spread the chocolate topping over the coconut mixture and spread evenly. Place in refrigerator and cool until set. Cut into squares and serve!


How To Store Mound Bars

This dessert may be stored in an airtight container in the refrigerator or a cool, dry place for up to one week.
