Pistachio Salad

An oldie but a good one! Fluffy deliciousness in every bite!

I grew up eating this delicious, fluffy salad made by my grandma. I can still picture all of us sitting at her kitchen table with my grandpa at the end of the table while eyeing that fluffy green salad and anxiously awaiting for it to be passed to me.


I know this recipe has been around for a long, long time but it is definitely worth sharing again so the next generation will keep enjoying this fluffy salad. I know the love for it carries on with one of my daughters and I hope she will make it for her kids when that time comes!


How to Make Pistachio Salad

What is this green fluffy salad? This is an easy four ingredient salad that you can serve at the holidays, potlucks or anytime it sounds good with your meal. It is simply pistachio pudding mixed with crushed pineapple, mini marshmallows and whipped cream. My grandma added nuts (making it like the Watergate Salad), but the no nut version is my family's favorite.


In a large bowl, combine the instant pistachio pudding and mix with the crushed pineapple (do not drain the pineapple) and mix until the pudding mix is completely blended with the crushed pineapple. Add the mini marshmallows and mix. Fold in the whipped cream. If you want to add chopped walnuts, pecans or pistachios, add those now. Cover the Pistachio Salad and refrigerate for 3-4 hours or overnight.

Leftovers? Keep this salad in an airtight container in the refrigerator for 3 days.
