Pork Chops and Rice is full of delicious flavor infused by green pepper and onion with fluffy rice and tender pork chops all made in one pan. This is a great meal for busy weeknights!
This is another delicious and easy dinner recipe from my sister from another mister. I have shared that she is of Mexican descent and this is another one of her Mexican recipes that her mom made and she grew up eating. The rice is very much like a Spanish rice and the pork chops are so tender. It is amazing and a must try! One-dish meals are one of my favorites and this one quickly became one of our family's favorite recipes.
What You Need
Boneless Pork Chops, thick cut
Medium Onion
Small Green Bell Pepper
Long Grain White Rice, uncooked
Diced Tomatoes
Chicken Broth
Salt
Black Pepper

Tips When Making Pork Chops with Rice, Tomatoes, and Green Pepper
When adding the rice, make sure it is not on top of the pork chops. It will need to cook in the liquid of the diced tomato and chicken broth.
While cooking, keep checking to ensure you have enough liquid. The chicken stock will cook off if you are cooking it too hot, so check the liquid often.
DO NOT STIR the rice while cooking. Make sure your liquid level is good and let it simmer. The rice will get soft and fluffy!
Check your pork chops with a food thermometer to ensure they have reached an internal temperature of 145°F before serving.
The type of pork chop doesn't matter: you may use bone-in pork chops or boneless chops in this recipe.
Brown rice may be substituted; check the package for cooking directions.
Not a green bell pepper fan, substitute any color of peppers like yellow or red bell pepper
If you like a spicy pork chop, add a little bit of jalapeno!
How to Make Pork Chops with Rice, Tomatoes and Green Pepper
Once you have the pork chops browned, add all other ingredients, cover and simmer until rice and pork chops are done. So good!
Step 1: Using an electric skillet or large skillet on the stove top, add olive oil (or vegetable oil) to your pan, place pork chops and season pork chops with salt and black pepper on both sides of the pork chops and then cook on medium-high heat (350°F on the electric skillet) and brown the chops on both sides. While the pork chops are cooking, cut up the onion and green bell pepper.
Step 2: Once you have browned pork chops, lower the heat to medium low (250°F on the electric skillet) and add the slices of onion and green pepper. Place both on top of the pork chops to infuse the flavor into the pork chops.
Step 3: Add the rice around the pork chops, then add the diced tomatoes and chicken broth on top of the raw rice. Give it a stir to incorporate the ingredients and don't stir again until done!

Step 4: Cover with a lid and keep the cooking temperature steady on medium low or low (200-250 degrees F on the electric skillet). Cooking time will vary depending on how your electric skillet or stove top cooks. You do not want the liquid to boil, instead just a slow simmer. Check the liquid level after about 10 minutes and if the rice doesn't look fluffy, add more chicken stock and allow to continue cooking. It doesn't take much time to cook, maybe 20-30 minutes, depending on temperature, for the rice to be fully cooked and the pork chops to get to an internal temperature of 145°F.

You may store the Pork Chops & Rice in an airtight container in the refrigerator for up to 3 days. It does warm up well in the microwave!
