Rotel Tomatoes

Tortillas - corn or flour

Your favorite taco garnish - lettuce, tomatoes, cheese, jalapeno, avocado, etc.

If you love Mexican infused recipes, give these a try:

Tips When Making Pork Tacos

  • Cook in the slow cooker using Pork Shoulder, which is a cut of meat from the shoulder of the pig and is also known as the "picnic roast."

  • Before cooking, the pork needs to be well seasoned and rubbed down with taco seasoning

  • If you prefer the Pork Tacos to be spicy, use HOT Rotel Tomatoes (I used the Original version and don't find it spicy; there is also a Mild version)

  • I have seasoned and slow cooked frozen and thawed meat. Obviously the frozen meat takes longer (6-7 hours on high) whereas the thawed meat will cook more quickly (3-4 hours on high). Either way it turns out perfect!

How To Make Pork Tacos

Once you have the pork shoulder prepared, move it to the slow cooker and dinner will be on the table in 4-6 hours!

Step 1: Prepare the slow cooker with non-stick cooking spray. Remove the string from the pork shoulder and throw away. Rub on the taco seasoning until the pork is fully coated.

Step 2: Move the seasoned pork to the slow cooker. Add your favorite (Hot, Original or Mild) Rotel Tomatoes.

Step 3: If the pork is frozen, cook on high for 6 hours and if thawed, cook on high for 4 hours. When the pork is tender, shred completely and mix to combine the pork with the liquid.

The final step is to heat the tortillas, add the pork, garnish as desired and enjoy!

How to Store Pork Tacos

Refrigerate: The leftover pork can be stored in an airtight container in the refrigerator for up to 3 days.

Freeze: Once cooled, the leftover pork can be stored in a freezer bag, removing as much air as possible, in the freezer for up to 2 months. Move the pork to the refrigerator to thaw, then warm up in your slow cooker, on the stove top or in the microwave (heating slowly). Remember to date your bag before moving to the freezer!

This recipe is so easy and really Forkin' Good! Start it in the morning and you have a perfect meal for a busy weeknight!
