Pumpkin Bread

Every bite of this bread is full of pumpkin flavor!

This recipe came to me from my sister-in-law on my husband's side of the family. It is an old family recipe and she has been making it for years. My kids grew up eating this delicious pumpkin bread on Thanksgiving and Christmas. When she found out how much we love it, she not only shared the recipe, but she made sure we went home every holiday with a loaf of her Pumpkin Bread.


Besides the great flavor, the one thing I love about this recipe is that it is made in one bowl and three loaf pans (yes, it makes a lot!). Also, you will likely have most of the ingredients in your kitchen which means you can have this bread made and sliced and ready to share in no time.


What You Need

Flour

Salt

Baking Soda

Cinnamon

Pumpkin Pie Spice

Sugar

Vegetable or Canola Oil

Water

Pumpkin (canned)

Eggs


How to Make Pumpkin Bread

Preheat your oven to 350°F and prepare three (3) loaf pans with non-stick cooking spray. In a large mixing bowl, whisk together the flour, salt, soda, sugar and spices. Make a hole in the middle of the dry ingredients and add the oil and water. Start mixing on slow speed and once combined, increase to medium speed. Once fully combined, add the can of pumpkin and combine. Add the eggs one at a time and continue mixing.


Pour the batter in to THREE (3) prepared standard sized loaf pans (8 1/2" x 4.1/2" x 2 5/8") and bake or 60-70 minutes or until the knife comes out clean from the center of the bread.


If you are baking the pumpkin bread as a gift, you can place the batter in the mini loaf pans (aluminum pans) and bake as directed above only adjusting the bake time to 45 minutes or until the knife comes out clean from the center of the bread.


How to Freeze Pumpkin Bread

Remove the bread from the loaf pan and allow the bread to cool completely. Wrap the bread tightly with aluminum foil and place in a heavy-duty freezer bag. The bread is typically good for two months so be sure to date the bag before putting in the freezer. To thaw the bread, take it out of the freezer and allow it to reach room temperature before you take it out of the packaging.
