This recipe is from my Mom's collection. These cookies bake up with a cake-like texture and every bite has a perfect amount of pumpkin flavor! They are very easy to make and are so delicious!
Ingredients
Shortening
Sugar
Egg
Flour
Baking Powder
Salt
Cinnamon
Ginger
Nutmeg
Pumpkin
Cream Cheese
Vanilla
Butter
Powdered Sugar
How to Make Pumpkin Cookies
Preheat oven to 400°F . In a medium bowl, combine flour, Baking Powder, Salt, Cinnamon, Ginger, Nutmeg and mix to combine all dry ingredients. Set aside.
In a separate bowl, cream shortening and sugar. Add egg and continue mixing. Add pumpkin and continue mixing. Slowly add in the dry mixture a little at a time while continuously mixing. Continue this step until the dry mixture is fully incorporated with the wet mixture.
Drop by spoonfuls on to ungreased cookie sheet. Cook for 8 minutes. This recipe makes approximately 2 dozen, maybe less depending on the size of your cookie.
How To Make Cream Cheese Frosting
In a medium bowl, add cream cheese, softened butter, and vanilla and mix well. Slowly add in powdered sugar and continue mixer until fully incorporated. Top each cookie with frosting.
