Tips for Making Quick & Easy Chicken Casserole with Broccoli Cheese Soup
You can use leftover chicken (or a great way to use up leftover turkey) that has been baked or boiled
Use a Rotisserie Chicken after removing the skin and bones and chop or shred before adding to the recipe
The chicken breast may be served whole, chopped or shredded; whatever your family prefers
You may add 1 pound of fresh broccoli or thawed frozen broccoli florets as an option
You may substitute with a can of cream of chicken soup or cream of mushroom soup instead of cream of broccoli soup
You may prepare this recipe up to 24 hours in advance and store it in your refrigerator until ready to bake
How to Make Quick & Easy Chicken Casserole with Broccoli Cheese Soup
Once you have the chicken prepped, add the other three ingredients and it will be on the dinner table in about 45 minutes!
Step 1: Preheat oven to 350°F and prepare an 8x8 inch baking dish with nonstick cooking spray. If using raw chicken, place the chicken in a skillet prepared with nonstick cooking spray and sprinkle with salt and black pepper and cook on medium heat. Brown the chicken in a skillet cooking on both sides. Place the cooked chicken in the prepared 8x8 casserole dish.
Step 2: Crush croutons in a plastic bag. Top the chicken with cream of broccoli soup, shredded cheese and crushed seasoned croutons (optional - place broccoli in pan before adding soup). Cover and bake for 30 minutes. Uncover and cook for another 10 minutes to allow the cheese to melt and for the chicken to reach an internal temperature of 165°F. Adjust your cooking time, if necessary, to ensure you reach the proper internal temperature.
