Red Velvet Cool Whip Cookie Recipe

This easy and delicious recipe for cool whip cookies uses only 4 simple ingredients! The delicious cookies are soft, chewy, and truly tasty! No need for chilling, and you can easily customize them with any cake mix flavors you prefer!

Red Velvet Cool Whip Cookies

My sister from another mister was the first to introduce me to Cool Whip Cookies. I hadn't made this easy cookie recipe before and one day, when looking through my husband's grandmother's recipes, I found one for 'Cake Mix Cookies' with the same ingredients. This recipe was from 1975 (50 years ago!). I adore vintage recipes, so I knew I had to try them, and they certainly don't disappoint! 


These delightfully simple Cool Whip Cookies can be tailored to any occasion by changing the cake mix flavor! I decided on Red Velvet cake mix, making them perfect for Christmas, Valentine's Day, or the 4th of July! You can also add mix-ins or holiday sprinkles to make them more festive!


What You Need

  • One box Red Velvet Cake Mix 

  • Cool Whip

  • Large Egg

  • Powdered sugar


Tips for Making Red Velvet Cool Whip Cookies

  • You will need to use a tub of Cool Whip, or a similar brand, the frozen whipped topping. 

  • I recommend mixing the batter with a wooden spoon because this is a sticky batter! If using a hand mixer, the batter may stick to the beaters! 

  • If you feel the mixture is too dry, you may add a teaspoon of water or milk while mixing. 

  • Not feeling Red Velvet, then use any flavor cake mix! Chocolate Crinkle Cookies are the classic, but use any variety of flavors such as lemon or strawberry!

How to Make Red Velvet Cool Whip Cookies

Step 1: Preheat oven to 350°F and place parchment paper on cookie sheet. In a large bowl, add one box of cake mix, egg and cool whip. Mix the dough using a wooden spoon. It does take a bit of stirring, but the batter will become smooth, but will be very sticky. If you feel the batter is too dry, add 1 teaspoon (or less) of water or milk.

Step 2: Add 1/2 to 1 cup of powdered sugar to a small bowl. Using a small cookie scoop, drop the cookies by teaspoonfuls into the powdered sugar. Coat the cookie dough balls with powdered sugar before picking up the dough. This will eliminate the sticky dough batter from sticking to your hands. Immediately place the cookie dough ball on the prepared baking sheet.  Bake for 10-12 minutes.  As the cookie bakes, they spread slightly causing the powdered sugar to crack resulting in the crinkle cookie look.

Step 3: Move the cookies, while still on the parchment paper, off the baking sheet and on to a cooling rack. Allow the cookies to cool. Take a firm spatula to remove the cookie from the parchment paper as the cookies do tend to stick. You may use non-stick cooking spray on the parchment paper to help eliminate the sticking of the cookies.

Fun Cool Whip Cookies you can make with any flavor of cake mix:

  • Birthday - Funfetti cake mix with a few extra sprinkles in the batter and added to the top of warm cookies

  • Valentine's Day: Red Velvet cake mix

  • Easter: Carrot cake mix or Lemon cake mix

  • 4th of July, Memorial Day and Labor Day: White cake mix with red and blue food coloring

  • Thanksgiving: Pumpkin Cake Mix

  • Christmas: Red Velvet


How to Store Cool Whip Cookies

Store these easy cool whip cookies at room temperature in an airtight container for 3-4 days. For longer storage, place in a freezer-safe container or freezer bag for freezing. Place parchment paper between the layers so these tasty cookies don’t stick when you defrost them. Freezing may affect the crinkle look of the cookies.
