This recipe came from my sister-in-law, or as I like to call her, my "sister from another mister." She knew how busy our lives were when our kids were young and shared this recipe for something easy to make when we had busy weeknights full of ball games and not much time for dinner. After my mother-in-law passed away, I found a recipe very similar to this in her recipe collection - a vintage recipe! I've been making this recipe for 25 year years. Since I'm from Iowa, it's only appropriate to share how this sandwich got it's name. A cook named Joe at a cafe in Sioux City, Iowa added tomato sauce to loose meat and the rest is history!

I can't stress enough how quick, easy and delicious this meal is! This specific recipe combines the Campbell's chicken gumbo soup with ketchup and mustard which is the perfect blend of flavors! Side it with potato chips and a dill pickle and you've got a big hit!
Step 1: In a large skillet over medium-high heat, brown meat, breaking apart into crumbles as it cooks, for about 3-5 minutes. Drain the excess fat and return to pan. Over medium heat, add a can of chicken gumbo soup, ketchup and prepared mustard. Reduce to low heat and mix until fully combined. Cook for 8-10 minutes or until the mixture has thickened to your liking. Remove from heat.
Step 2: Spoon meat mixture to the bottom bun or eat with a fork, it's delicious either way!
