Strawberry Bread

This quick and easy Strawberry Bread is packed with delicious diced strawberries, making it ideal for breakfast or a tasty after-school treat!

The sweet bread recipe came from my mother-in-law's collection. I was thrilled to discover it and decided to test it out; it's absolutely delicious! Since it yields 2 loaves, many had the opportunity to taste it and everyone enjoyed it. This is a soft, moist bread with wonderful flavor! Moreover, it's simple to prepare using simple ingredients you likely have on hand. 


What You Need

  • Frozen Strawberries, unsweetened 

  • Sugar

  • All Purpose Flour

  • Cinnamon

  • Salt

  • Baking Soda

  • Vegetable Oil or Canola Oil

  • Large Eggs

  • Pecans, optional

Tips for Making Strawberry Bread

  • This bread is full of strawberry flavor with a moist and tender texture and is easy to make

  • If you like a little crunch in your bread, add white chocolate chips or pecans (or your favorite nut)

  • This delicious bread is perfect for giving as Christmas gifts and can be made in smaller loaves or mini loaves

  • ​If you like glaze on your sweet bread, combine powdered sugar, milk and vanilla extract and pour over the bread once it reaches room temperature

  • ​The time of year you make this bread doesn't matter when using frozen strawberries; I like making it in the cold months

  • I have only made this quick bread recipe with frozen strawberries and cannot comment on how it will work with fresh strawberries


How to Make Strawberry Bread

This is an easy strawberry bread recipe using ingredients from your pantry that will be ready in no time! 


Step 1: Place the strawberries in a medium bowl and lightly coat with sugar and set aside until thawed, then slice.

Step 2: Preheat oven to 350°F and prepare 2 loaf pans with non-stick cooking spray. In a large bowl, combine flour, sugar, cinnamon, salt and baking soda and mix well. In a separate bowl, blend the oil and eggs in with the chopped strawberries and add to the dry ingredients. At this point you would stir in pecans (optional).

Step 3: Divide the batter between two pans and bake for 45 to 50 minutes or until a toothpick comes out clean. Allow the bread to cool in the pans for about 10 minutes, then remove the scrumptious strawberry bread from the pan and cool completely on a wire rack.

How to Store Strawberry Bread

Refrigerator: Once the bread has cooled to room temperature, tightly wrap the bread with plastic wrap or store in an airtight container in the refrigerator for up to 5 days.  

Freezer: Once the bread has cooled to room temperature, wrap by slice or loaf with plastic wrap and put in a resealable freezer bag. The bread may be stored for up to 3 months. Thaw the bread in the refrigerator. Remember to date your bag before freezing! 


This delicious sweet bread may quickly become a family favorite! It is Forkin' Good!
