Strawberry Cake with strawberry frosting is light, moist, full of strawberry flavor and best of all, it is easy to make!
This recipe came from my maternal Grandmother's recipe collection. I have made this cake and frosting a few times and it is very good and full of strawberry flavor thanks to strawberries in the cake and frosting. This cake is easy because it starts with a cake mix, enhanced to make it taste homemade. It is very refreshing and would be perfect to share at a church social, potluck or for a holiday. So yummy!
What You Need
Cake Frosting
White Cake Mix Powdered Sugar
Whole Milk Unsalted Butter, softened
Vegetable Oil Vanilla
Frozen Strawberries Heavy Whipping Cream or Whole Milk
Strawberry Gelatin Fresh Strawberries

Tips When Making Strawberry Cake
Yes, start with a boxed cake mix but replace the water with whole milk to give it a homemade taste. Starting with a boxed cake mix is what makes this easy!
This cake takes 4 eggs, added one at a time, which will make the cake softer and less likely to over bake and dry out in the oven.
Add a box of strawberry gelatin to the batter. It adds more strawberry flavor and is what makes the cake a beautiful pink color!
Fresh or frozen strawberries works for this recipe; I tend to use frozen in the cake mix and fresh in the frosting
Chop the strawberries into small pieces for the cake and icing.
This cake may be made as a round, layered cake or in a 9x13 inch baking pan. I have made it both ways and both work really well!
How to Make Strawberry Cake
An easy to follow recipe that comes together quickly and it's pretty enough for sharing!
CAKE
Step 1: Preheat oven to 350°F and prepare a 9x13 inch pan with non-stick cooking spray. In a large bowl, add the cake mix, milk, oil, frozen strawberries (thawed), and strawberry gelatin and beat 2 minutes.
Step 2: Add eggs, one at a time, mixing for 1 minute into the batter before adding the next egg.
Step 3: Pour the batter into the prepared 9x13 inch pan and bake for 30-35 minutes or until a toothpick comes out clean.
FROSTING
Step 1: In medium bowl, mix together powdered sugar, softened butter, vanilla, heavy whipping cream or whole milk and fresh strawberries. Add enough heavy whipping cream or whole milk to make the frosting smooth, but not runny.
Step 2: Once the cake is cool, spread the frosting on the cake. Decorate with fresh strawberries, if desired.
How to Store Strawberry Cake
You may store Strawberry Cake in an airtight container in the refrigerator for up to 5 days. I take it out of the refrigerator and let it sit at room temperature for a few minutes before serving.
